Pineapple Fruit Jelly
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 5 servings
- Pineapple : ½ pc
- Sugar : 12 tsp
- China grass : small bundle (100 gm
Preparation
Step 1
Cut the pineapple into small pieces and boil them in ½ cup of water, till the whole water evaporates.
Step 2
In a mixer grinder, grind this pineapple, together with 12 tsp of sugar.
Step 3
Put it in a sieve, and remove the pulp.
Step 4
Add the china grass with 1 ½ cup of water, and boil till it dissolves completely.

Add the pineapple juice to this. give it a good stir and transfer it for refrigerating.

Step 8
After refrigerating for not less than 2 hours, the pineapple fruit jelly is ready to be served.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
