Pineapple Curry
A traditional Kerala curry where mixed simmers gently in a spiced coconut gravy until every piece soaks up the flavours. The curry leaves and raw coconut oil finish add that characteristic Kerala fragrance.
Ingredientsfor 4 servings
- 1 cup Pineapple cut small pieces
- 2 nos Green chillies
- 1/4 tsp Chilly powder
- 1/4 tsp Turmeric powder
- 1 tsp Salt
- 2 tbsp Sugar
- 1 cup Coconut — grated
- 1/2 tsp Cumin seeds (Jeerakam)
- 2 tbsp Curd
- 1/4 tsp Mustard seeds
- 2 nos Red chillies (Kollamulaku)
- 7 nos Curry leaves
- 2 tbsp Oil
Preparation
Step 1
Cook pineapple pieces along with chilly powder, turmeric powder, green chillies, sugar and salt.
Step 2
Grind together coconut, cumin seeds and curd.
Step 3
Once pineapple is cooked and has softened, add the coconut paste and cook for 5 - 10 minutes.
Step 4
Warm the oil in a pan or a kadai.
Step 5
Add mustard seeds and when they allow to crackle, add red chillies and curry leaves.
Step 6
Pour this seasoning into the above curry.
Step 7
Goes well with rice, pulao or biriyani.
Tip
For a thicker gravy, cook uncovered on medium heat for the last few minutes. For a thinner consistency, add a splash of warm water.
