Peas Egg Fry-Kerala Street Food
Kerala-style dry fry where egg is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 2 servings
- 1 cup Green peas/pachapattani soak for 6 hours
- 3 Egg
- 1 medium Onion
- 3 Finely Green chilly
- 2 tbsp Curry leaves
- 1 tsp Ginger
- 1/2 tsp Turmeric powder
- 3/4 tsp Pepper powder
- 2 tbsp Coconut Oil
- Salt
Preparation
Step 1
Pressure cook the green peas with salt in enough water for 1 whistle.drain the remaining water after its cooked.
Step 2
Gather and prep all your ingredients before you begin.
Step 3
Heat the oil in a vessel and cook chopped ginger,onion,green chilly and curry leaves until soft.
Step 4
Add salt,turmeric powder and egg one by one and scramble.
Step 5
Next, add cooked peas and Stir everything together thoroughly.cook for some more time.Finally sprinkle pepper powder.
Step 6
And spicy Peas Egg Fry is ready.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
