Pazham Rava Laddu
Old-fashioned Kerala sweetmaking — no shortcuts, no substitutes. Jaggery, ghee, and coconut come together through slow cooking and patience into something far greater than the sum of their parts.
Ingredientsfor 4 servings
- 3 nos Banana(Nendrakaya (Ethakka)
- 2 cup Coconut — grated
- 5 nos Cardamom
- 1 cup Sugar
- 1 cup Rava — roasted
- 3-4 tsp Ghee
Preparation
Step 1
Get 1 cup sugar in a blender and add 5 nos. Of cardamom.
Step 2
Grind sugar smoothly.
Step 3
Cut the plantain into small cubes.
Step 4
Get 2 cups grated coconut and set aside.
Step 5
Heat 3 tsp ghee in a non stick pan.
Step 6
Add cubed nendrakaya and cook. Give it a stir now and then. Cook until the banana is soft.
Step 7
Add the grated coconut and ground sugar. Stir everything together thoroughly in medium flame and combine.
Step 8
Add 1 cup roasted rava and combine. Stir everything together thoroughly and Let it cook for 2 minutes. Once cooked, turn off the heat.
Step 9
Close with a lid for 10 minutes.
Step 10
Make medium sized balls with your hand.
Step 11
Wrap the Pazham Rava Laddu with grated coconut by rolling.
Step 12
Rest the rava balls for 30 minutes. Kids love the sweet nutritious snack.
Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
