Pazham Pori-Ethakkappam
A Kerala breakfast classic with its characteristic soft, fluffy middle and paper-thin, crispy edges. The fermented batter gives it a gentle sourness that balances rich curries.
Ingredientsfor 6 servings
- 4 Nenthrapazham
- 1 tsp Sugar
- Wheat powder4 tsp
- 2 tsp Rice powder
- Sesame seeds 2 tsp
- 1/2 litre Oil
Preparation
Step 1
Peel bananas and slice it into small pieces.
Step 2
Make the batter with wheat powder,rice powder,sugar,sesame seeds and salt.
Step 3
Dip this bananas into this batter.
Step 4
Fry till it goes golden brown color.
Step 5
Drain excess oil.
Step 6
Now pazhampori/ethakkapam is ready to serve.
Tip
The fermented batter is the heart of good appam. Give it at least 8 hours to rise — overnight is best. The slight sourness is what makes appam special.
