Payar Ela Thoran | Long Runner Beans Stir Fry
This beans, a Kerala delicacy, is a simple yet nutrient-rich dish made from long runner bean leaves (Payar Ela).
Ingredientsfor 3 servings
- 4 cup Payar leaves(Finely chopped) Use tender stem and tender leaves of Long runner beans
- ½ cup Coconut — grated
- 4 nos Green chillies
- 3 tbsp Coconut oil
- 1 tsp Mustard seeds
- 3 Shallots — chopped
- 2 nos Garlic
- Curry leaves, a few
- Salt, to taste
Preparation
Step 1
Wash the leaves well and finely chop them.
Step 2
Set a pan over medium heat and pour in the oil or a kadai. let the mustard seeds crackle and add the chopped leaves and cook for a while.
Step 3
Grind coconut, shallots, fennel seeds, curry leaves, green chillies and garlic into a rough mixture.
Step 4
Add the coconut mix, turmeric powder, salt and Stir everything together thoroughly. Stir the coconut mixture into the chopped Long Runner Beans Leaves. Put the lid on and cook on low heat for 2 minutes. Turn off the heat.
Step 5
Payar Ela Thoran is ready.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
