Payam (banana) Nirachath (Step By Step Photos)
Malabar recipe which can be served as an evening snack, especially during ramzan.
Ingredientsfor 5 servings
- 1 kg Banana
- 1 Coconut
- 3 tbsp Sugar
- 2 tsp Pure ghee
- Raisins, cashew nut, to taste
- 1/2 cup Flour
- Water, to taste
- Oil to fry
Preparation
Step 1
Heat ghee in a vessel.
Step 2
Cook raisins and cashew nut (if required) in ghee. Set aside.
Step 3
In the same ghee fry coconut and sugar till the coconut turns lightly browned. Mix the raisins in it. Set aside.
Step 4
Peel the bananas and give 3 vertical cuts on the bananas.
Step 5
Fill the coconut mixture in these cuts.
Step 6
Mix some water with flour to make a paste.
Step 7
Apply it on the banana to close the filling.
Step 8
Warm the oil in a kadai.
Step 9
Fry the filled bananas in oil.
Step 10
Serve it sliced.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
