Pavekka Thoran
Simple, honest, and on every Kerala lunch plate — mixed thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 3 servings
- 3 nos Bittergourd Pavakka
- 1 nos Onion
- 1/2 Of Coconut
- 5 nos Green chillies
- 1/2 inch Ginger
- 1 tsp Mustard seeds
- Salt, to taste
- Coconut Oil ! tbsp
Preparation
Step 1
Soak grated bitter gourd in salted water for 5 minutes and then drain off the water.
Step 2
Mix the bitter gourd, coconut, salt, green chillies, onion and salt together using your hand.
Step 3
Pour oil into a pan and heat it.
Step 4
Let the mustard seeds crackle and cook ginger.
Step 5
Add the bitter gourd mix and cook well.
Step 6
Sprinkle little water. Cover with a lid and let it cook.
Step 7
Cook till all the water has dried up.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
