Pavakkai Fry | Bitter Gourd Fry | Pavakkai Poriyal
A preparation of Bitter Gourd. Bitter Gourd Fry is a vegetarian dish and you will find the bitter taste almost subdued. But you will have to consume the dish soon after it is fried. The fried crispy crunchy texture should not be lost.
Ingredientsfor 2 servings
- 2 medium Bitter gourd Pavakka
- 4 tsp Chilly powder
- 1 tsp Turmeric powder
- Salt, to taste
- 1 tsp Black Pepper Powder
- 3 nos Garlic pods
Preparation
Step 1
For preparing the Dish, first prepare a smooth paste with the chilly powder, turmeric powder, garlic, salt, black pepper powder and water as needed.

It should come out as a smooth paste.
Step 3
Wash the bitter gourd well and drain. Cut them into semi thick slices and place them on a plate and sprinkle with turmeric powder. Set aside for 1 hr.
Step 4
Get the bitter gourd pieces and pat dry them and marinate them with the smooth paste. Keep the bitter gourd aside for a few minutes.
Step 5
Fry in hot oil them in oil to a golden brown crispy, crunchy texture. Serve the fried bitter gourd pieces hot. Otherwise it will not taste great.
Step 6
The paste should be marinated on the bitter gourd like we marinate fish for frying. This is healthy nutritious dish that should be consumed at least once a week.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
