Pavakka Pachadi - Tasty
A traditional Kerala Sadya dish that carries the flavours of coconut, yogurt, and carefully balanced spices. Each component of the feast has its role, and this one brings a quiet, essential balance to the banana leaf.
Ingredientsfor 4 servings
- 2 medium Bitter Gourd Pavakka
- 11/2 cup Yoghurt/Curd
- Oil — for deep frying
- 1 tbsp Oil
- 1/2 tsp Mustard seeds
- 3 - small Onions — chopped (Kunjulli)
- 2 - Dry red chilies broken tinto 2 - 3 pieces (Kollamulaku)
Preparation
Step 1
Marinate the bitter gourd pieces with the above mentioned ingredients and keep it for 20 - 30 minutes.
Step 2
Fry them, until light brown and crisp.
Step 3
Place it on a newspaper or a kitchen tissue inorder to remove excess oil.
Step 4
Add the fried bitter gourd pieces to yoghurt.
Step 5
Pour oil into a pan and heat it.
Step 6
Allow to crackle mustards seeds.
Step 7
Add small onions and red chillies and sautT for sometime.
Step 8
Add this seasoning to the bitter gourd mixture and Stir everything together thoroughly.
Step 9
Goes well with hot rice.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
