Pavakka Cherupayar Thoran
Simple, honest, and on every Kerala lunch plate — bitter_gourd thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 2 servings
- 1 nos Bitter gourd finely chopped, Pavakka
- 1 cup Green Gram cooked, Cherupayar
- 1 nos Onion finely chopped, big
- 1/2 cup Coconut — grated
- 2 Cloves Garlic
- 2 nos Green Chillies
- 2 nos Dry red chillies
- 1 tsp Mustard Seeds
- 1/2 tsp Chilly powder
- 1/2 tsp Turmeric Powder
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Set a pan over medium heat and pour in the oil. Add mustard seeds, dry red chillies and curry leaves. cook it, stirring.
Step 2
Add chopped onion and chopped bitter gourd with a pinch of salt and cook it, stirring well until the bitter gourd is cooked.
Step 3
Next, add the boiled green gram and mix it well. Grind coconut, garlic, turmeric and green chillies together and add it to the above mixture.
Step 4
Stir everything together thoroughly. Put the flame low and close the pan with a lid for 2 seconds. A nutritious dish is ready! Serve with hot rice.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
