Pavakka - Carrot Mezhukkupuratti
Finely chopped bitter_gourd stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 3 nos Bitter gourd
- 1 nos Carrot big size
- 2 nos Onion big size
- 5 nos Green chilly
- Salt, to taste
- Mustard seeds, to taste
- Oil, to taste
Preparation
Step 1
Slice bitter gourd and carrot lengthwise into pieces of 2 " length and thickness equal to that of finger chips/ french fries. :- Even a thickness lesser than that gives u a Taste.
Step 2
Cut Onions into thin and long slices. 3)Heat the oil in a pan let the mustard seeds crackle.
Step 3
Add Sliced Onions and Continue cooking for 2 to 3 minutes.
Step 4
Add Bittergourd pieces and cook for another 1 minute.
Step 5
Add carrot slices and green chillies and cook the whole for 3-4 min.
Step 6
Add salt as per taste.
Step 7
Now simmer the flame and keep the pan covered till the whole vegetables are cooked well.
Step 8
Cook the mixture in between to avoid sticking on to the pan. :-You can add oil in between as per the requirement to avoid sticking.
Step 9
Serve while still hot!
Step 10
The recipe tastes better if avoided cooking in water and if cooked at low flame with the lids closed.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
