Pathiri Ularthiyathu
Slow-roasted in coconut oil with a generous hand of spices, this mixed fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 2 servings
- 4 nos Pathiri
- 1/2 Of Coconut
- 1/2 cup Sugar
- 3 nos Cardamom
Preparation
Step 1
Cut the pathiri into rectangular shapes.
Step 2
Heat a vessel and cook coconut, cardamom and sugar in it for 3 minutes.
Step 3
Add pathiri pieces and cook again for 5 minutes.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
