Parippu Payasam
Slow-cooked until the milk reduces and turns a gentle pink, this payasam is pure comfort in a bowl. Every Kerala celebration ends with a payasam like this — rich, sweet, and fragrant with cardamom.
Ingredientsfor 6 servings
- 1 cup Green gram Moong dal without skin
- 2 large Jaggery (Sharkkara)
- 3 tbsp Ghee
- 1 cup Maggi Coconut milk powder
- 1/2 tsp Cardamom(powdered (Elakka)
- 1/2 tsp Dry ginger powder Chukku
- 20 nos Cashew nuts
Preparation
Step 1
Fry the moong dal in a heated pan on a low flame, till a nice aroma comes.
Step 2
Do not make it brown and do not use oil or ghee.
Step 3
Make a jaggery syrup with little boiling water.
Step 4
Make 3 1/2 cups of coconut milk from the coconut powder.
Step 5
Cook the dal nicely in a pressure cooker.
Step 6
Make sure its not at all dry after cooked.
Step 7
Add this cooked dal into the jaggery syrup and stir it for about 5 minutes.
Step 8
Add ghee to that and stir it for about 5 minutes.
Step 9
Add the coconut milk and stir it continuously.
Step 10
Do not boil it.
Step 11
Fry some cashew nuts in 1 tbsp of ghee.
Step 12
Finally, add the powders and fried cashew nuts into the payasam.
Step 13
Tip: :- Be ready with all the ingredeints like jaggery syrup and coconut milk. So it will be easy.
Step 14
Use brown jaggery or else add dark brown sugar.
Tip
Never rush the milk reduction by increasing the heat. Scorched milk adds a bitter undertone that ruins the entire payasam.
