Parippu Curry Easy
This homestyle dal curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 4 servings
- 1 cup Parippu Lentils/Dal
- 1 tsp Turmeric powder
- 1 nos Onion diced & divided into half, medium
- 1 tsp Ginger — sliced
- 1 Stick Cinnamon (Karugapatta)
- 5 - Curry leaves
- 1 tsp Ghee
- Dried red pepper, to taste
- 1 cup Thick coconut milk
- Salt, to taste
- Lime, to taste
Preparation
Step 1
Wash the parippu, until the water is clear.
Step 2
Put parippu in pan and cover with water (water should be 1/2 inch above the lentils.).
Step 3
Add turmeric, half the onion, ginger, cinnamon stick and curry leaves.
Step 4
Cover and boil, until water is absorbed.
Step 5
Get off the flame and place in a bowl.
Step 6
Heat ghee in the pan.
Step 7
Fry the remaining onions & dried red pepper.
Step 8
Cook, until pale golden colour.
Step 9
Combine cooked parippu, the mixture & coconut milk.
Step 10
Return to flame and warm through.
Step 11
Add salt and Stir everything together thoroughly.
Step 12
Finish with a squeeze of lime & stir.
Step 13
Goes well with rice & curries.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
