Papaya Pudding
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 6 servings
- 2 cup Milk
- 2 cup Papaya
- 1 cup Condensed milk
- 1/2 cup Sugar
- 10 g China grass
Preparation
Step 1
Soak china grass in half cup of water for 10 minutes.
Step 2
Boil milk with sugar and condensed milk.
Step 3
When the milk starts boiling, heat china grass until melt and pour into the boiling milk. Stir everything together thoroughly and take it off the heat.
Step 4
Peel and chop the papaya into small pieces. Blend it to make a smooth paste and mix it with milk. Refrigerate for 3 hours.
Step 5
Papaya pudding is ready. Garnish it with chopped almonds.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
