Papaya Cake
Papaya, coconut, jaggery and other ingredients are combined together and baked.
Ingredientsfor 2 servings
- 175 g Raw papaya — grated
- 50 g Pumpkin — grated
- 2 tbsp Coconut — grated
- 125 g Wheat flour
- 20 g Cashew nuts roasted and broken
- 10 g Raisins
- 1/4 cup Nuts
- 4 tbsp Jaggery powder
- Cardamom powder A pinch (Elakka)
- Butter, to taste
- 1 cup Cream
- 1 cup Milk
Preparation
Step 1
For preparing papaya cake, wet the wheat flour with 1/4 cup of luke-warm water. Cover with a wet cloth and set aside for 10 minutes.
Step 2
Combine the grated papaya and pumpkin with the flour mixture and cover with the same wet cloth and set aside.
Step 3
Mix the flour mixture with cashew nuts, raisins and jaggery powder.
Step 4
Cook the papaya flour mixture using a double boiler till firm. Let it cool.
Step 5
Place the cake in a butter smeared baking dish. Melt the butter and spread over the cake.
Step 6
Sprinkle the coconut mixture and nuts.Bake for 10 minutes in 350 degree preheated oven. Whisk cream and milk. Spread over the baked cake.

Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
