Pan Fried Crispy Fish Fry
Kerala-style dry fry where fish is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 4 servings
- 4 Pc Fish(pomfret
- 11/2 tbsp Red chilly powder
- 1/2 tsp Turmeric powder
- 1/2 tsp Pepper powder
- 1 tbsp Corn flour
- 1 Egg white
- Curry leaves, a few
- 3 nos Green chilly
- Salt, to taste
- 3 tbsp Oil
Preparation
Step 1
Mix together all the ingredients for marination except oil for frying, curry leaves and green chillies. Taste the marinade and adjust the salt if needed.
Step 2
Marinate the fish with this marinade.
Step 3
Set aside for 10-15 minutes.
Step 4
Heat 2 tbsp oil in a pan and fry some Curry leaves and green chillies. Set aside.
Step 5
Pour oil into a pan and heat it and fry the fish to a crispy golden brown color.
Step 6
Fry on both sides in medium flame.
Step 7
Add fried green chilly and Curry leaves into the fried fish. Pan Fried Crispy Fish Fry is ready.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
