Palak Egg Thoran
Simple, honest, and on every Kerala lunch plate — egg thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 3 servings
- 250 g Or Palak — finely chopped
- 2 nos Eggs
- 1 tsp Mustard seeds
- 2 Springs Curry leaves
- 1/2 tsp Red chilly powder
- Turmeric powder A pinch
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing palak egg thoran, Heat the oil in a vessel and allow to crackle the mustard seeds.
Step 2
Add curry leaves and red chilly powder.
Step 3
Next, add chopped palak, salt and turmeric powder. Do not put the lid and allow it to cook till it becomes dry on low heat.
Step 4
Break the eggs and add it into the palak. Mix it continuously for 5 minutes.
Step 5
Palak egg thoran is ready. Serve with chapatti or as a side dish for rice.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
