Palada Pradhaman - Kerala Special
The kind of payasam that appears at every Sadya and disappears first from the banana leaf. Slow-reduced milk, a touch of sweetness, and the warmth of cardamom — simple in concept, extraordinary in taste.
Ingredientsfor 4 servings
- 1 cup Ready made Palada
- 11/2 Lt Milk
- 3 cup Sugar
- Pressure cooker of 5 Litre capacity
Preparation
Step 1
Clean the pressure cooker properly.
Step 2
Wash the rice ada first in cold water and then in hot water.
Step 3
Pour the milk (1.5 ltr) into the cooker.
Step 4
Add the washed ada into it.
Step 5
Add sugar into it.
Step 6
Sugar amount can be varied which depends on your taste. More sugar you put, more tastier it will be. Ideally 3 cups of sugar should be okay for 1.5 ltr of milk.
Step 7
Keep the pressure cooker on gas stove with the whistle placed properly.
Step 8
Once you get the first whistle, put the flame to minimum and keep the cooker for approx 20 minutes.
Step 9
Milk might come out when it whistles, pls clean it using a cloth.
Step 10
Switch off the gas and wait till its safe to open the cooker.

This is the easiest way and you will get the same style of traditional sadya palada :-) Try it and let me know your comments.

I suggest you to use good quality rice ada for optimum result. Priya or double horse ada will be ideal.
Tip
The payasam will thicken significantly as it cools. Stop cooking when it is still slightly thinner than your target consistency.
