Palaada | Rice Crepes
Step into the enchanting world of Palaada, delicate rice crepes that grace the tables of South Indian cuisine.
Ingredientsfor 4 servings
- 1 cup Raw rice
- 1 nos Egg
- Salt, to taste
- 1 cup Thick coconut milk
Preparation
Step 1
Wash and soak rice for 4- 6 hours. Now drain them.
Step 2
Add it to a blender and make a fine puree.
Step 3
Add coconut milk and salt to taste. Grind it.
Step 4
Stir in 1 egg into the jar and blend it slightly.
Step 5
Pour it into a bowl, if the batter is thick add enough coconut milk or water to make a very thin batter. The batter should be very watery.
Step 6
Now heat a nonstick pan. Pour a ladleful of batter in it and swirl the pan so it coats on all side of the pan. This takes only seconds to cook. Once it looks like it has cooked, you can fold it into triangles and place into hot case.
Step 7
Goes well with any veg or non veg curries.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
