Pacha Mango Choru
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 3 servings
- 2 cup Parboiled rice or basmati rice use white rice, if parboiled
- 100 g Very slightly raw and ripe mango sliced lengthwise
- 1/2 tsp Cumin seeds (Jeerakam)
- 1/2 tsp Fenugreek (Uluva)
- 1 tsp Black gram (Uzhunnuparippu)
- 1 tsp Green chillies — sliced
- 1 tsp Mustard seeds
- Salt, to taste
- Oil, to taste
- 20 g Nuts roasted, Nelakadala — ground
- 2 sprig Curry leaves
- 2 nos Dry red chillies (Kollamulaku)
Preparation
Step 1
Cook rice(not sticky) and set aside.
Step 2
Mango slices can be roasted or can be dried in hot sun.
Step 3
Roast cumin and powder it.
Step 4
Pour oil into a pan and heat it or a kadai.
Step 5
Let the mustard seeds crackle.
Step 6
Add fenugreek, curry leaves, green chillies and red chillies and roast it.
Step 7
Add cumin powder and Stir everything together thoroughly.
Step 8
Add cooked rice and mango slices to this and mix thoroughly.
Step 9
Garnish with roasted groundnuts and curry leaves.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
