Pacha Kurumulaku Sardine Fish Fry (Green Peppercorns)
Sardine fish fry/mathi fry is a typical kerala recipe.sardine fish fry with pacha kurumulaku (green peppercorns) is a quick,simple and perfect side dish for rice.Sardines are a great source of vitamin D, omega-3 fatty acids, protein, calcium and phosphorus and support cardiovascular health and reduce the blood sugar level.
Ingredientsfor 5 servings
- 10 Sardine fish
- 1 Clove Garlic
- Ginger small piece
- 2 tbsp Green peppercorn
- 1/2 tsp Turmeric powder
- Oil — for frying
- Curry leaves little
- Salt, to taste
Preparation
Step 1
Clean and wash the fish nicely with running water.make some gashes on each sides.take all the ingredients and set aside.
Step 2
Make a fine paste of green peppercorn,curry leaves,ginger&garlic.
Step 3
Apply the masala paste,turmeric powder and salt on fish.keep it for 10 minutes in refrigerator.
Step 4
Pour oil into a pan and heat it and pan-fry the each sides of fish.
Step 5
Once crisp take it off the heat and transfer it into a serving plate.serve hot Mathi Fry in pacha kurumulakku with rice &.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
