Paalak Thoran
Finely chopped mixed stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 1 bunch Paalak
- 1/2 cup Coconut
- 2 nos Onion medium size
- Ginger — chopped
- 4-5 Cloves Garlic — crushed
- 1/2 tsp Chilly powder
- Turmeric powder A pinch
- 1/4 tsp Coriander powder
- Salt, to taste
Preparation
Step 1
Chop paalak into small pieces.
Step 2
Place it in a strainer and pour boiling water into it and keep it for 10 minutes.
Step 3
By that time, heat 1 tbsp of oil and add finely chopped ginger and garlic and cook it, stirring for a minute.
Step 4
Next, add finely sliced onion. cook until it becomes very lightly browned.
Step 5
Add grated coconut.
Step 6
Add chilly, turmeric and coriander powder. Stir it for 2 minutes.
Step 7
Then mix cooked paalak and add required salt.
Step 8
Serve it hot with rice.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
