Paachor - Milk Rice
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 4 servings
- 1 cup Raw rice (Pachari)
- 2 cup Milk
- 2 cup Water
- 2 cup Jaggery — melt in 1 cup of water
- 1/2 cup Cashews
- 1/2 cup Golden raisins
- 1/4 cup Ghee
- 4 nos Cardamom seed — powdered
Preparation
Step 1
For preparing Paachor - Milk Rice, first cook rice in milk and water to very tender, falling apart stage.
Step 2
Melt jaggery in water and simmer to plain syrup stage.
Step 3
Add cooked rice to the melted jaggery, mix and cook on medium-low heat.
Step 4
Heat ghee in a small frying pan and fry cashews and golden raisins to light golden color.
Step 5
Add the whole thing - ghee along with fried cashews and golden raisins to the prepared paachor.
Step 6
Simmer on medium-low heat stirring in-between, until the whole thing thickens a bit and comes together to moist, firm mass.
Step 7
Stir in cardamom powder and mix thoroughly just before turning off the heat.
Step 8
Paachor - Milk Rice is ready! :- Serve the Paachor - Milk Rice warm or cold.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
