Orotti Easy
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 2 servings
- 2 cup Rice flour
- 4 cup Water
- Salt, to taste
- 3 tbsp Ghee
- 1 cup Coconut
- 1 tbsp Sugar
Preparation
Step 1
Boil water in a kadai with salt and ghee.
Step 2
Lower the flame and add the rice flour to the boiling water little by little and stir continously to make a smooth dough.
Step 3
Take it off the heat. and add coconut and sugar to the dough.
Step 4
Make rotis with hand or roti maker.
Step 5
Fry these rotis putting ghee on both sides.
Step 6
Goes well with any non veg curry or stew.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
