Orange Juice With Coconut Jelly
A refreshing drink that cools you down on a hot Kerala afternoon. Made with fresh ingredients and served chilled, it is the kind of thing you keep refilling without realising.
Ingredientsfor 2 servings
- 1/2 cup Tender coconut scraped
- 1/2 cup Tender coconut water
- 1/2 Dsp Lime juice
- 1/4 cup Orange juice
- 1 Dsp Gelatine
- 1/2 cup Sugar
Preparation
Step 1
Soak gelatin in 1/2 cup water and set aside.
Step 2
Add tender coconut water to the sugar. Melt the sugar in medium heat.
Step 3
When the sugar melts, add the soaked gelatin and remove from fire. Allow the mixture to cool.
Step 4
Add orange juice, lime juice and scraped coconut pieces into the mixture. Keep this mixture in a refrigerator to set.
Step 5
When the mixture begins to set, remove from fridge and beat the whole mixture once more. The coconut pieces should Stir everything together thoroughly with the jelly.
Step 6
Pour the orange and coconut mixture into a serving tray and cool in refrigerator.
Step 7
Orange juice with coconut jelly is ready.during summer season.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
