Onion Smash
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 8 servings
- 4 nos Onion
- 3 nos Curry leaves
- 1 Spoon Red chilly powder
- Salt, to taste
- Oil, to taste
- Tamarind, as needed
Preparation
Step 1
Cut onions into small pieces and fry in oil for about 3 minutes.
Step 2
Add salt, curry leaves, red chilly powder and tamarind. Stir everything together thoroughly and fry for 1 minute.
Step 3
Allow to cool.
Step 4
Put everything in a mixer grinder and grind well.
Step 5
Your onion smash is ready. Serve with dosa, idly, rice, boiled egg etc.
Tip
Taste as you go. Recipes are guidelines — your palate is the final judge. Adjust salt, sourness, and heat to what tastes right to you.
