Onion - Prawn Pickle
A tangy, spicy condiment that keeps for weeks and adds a sharp kick to any Kerala meal. Made with care and stored in a clean jar, this pickle gets better as the days pass and the flavours meld together.
Ingredientsfor 6 servings
- 2 cup Prawn
- 4 nos Onions — sliced
- 10 Cloves Garlic
- 20 nos Dry red chillies
- 2 piece Ginger
- 1/2 tbsp Cumin seeds (Jeerakam)
- 11/2 cup Vinegar
- 2 cup Gingelly oil
- 1 tbsp Garlic
- 2 nos Green chillies
- 1 tbsp Ginger
- Curry leaves, to taste
- Salt, to taste
Preparation
Step 1
For preparing onion - prawn pickle, clean the prawns. Marinate the prawns for 10 minutes with turmeric powder, 1 tsp vinegar and salt.
Step 2
Fry the prawns in oil and set aside.
Step 3
In the same oil fry onions, ginger, garlic, curry leaves and green chillies.
Step 4
Drop in prawns and fry it well.
Step 5
Drop in salt, vinegar and rest of the ingredients. Fry well and then allow it to cool.
Step 6
Allow it to cool and store in a bottle.
Step 7
Onion - prawn pickle is ready. Serve when required.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
