Onion Chilly Chicken
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 500 g Chicken
- 2 nos Onion — chopped
- 1 inch Ginger — chopped
- 4 Or Garlic — chopped
- 3 tsp Kashmiri chilly powder can be adjusted according
- Curry leaves, a few
- 3 tbsp Oil
- Salt, to taste
Preparation
Step 1
Grind together onion, ginger, garlic and chilly powder.
Step 2
Wash and set aside the chicken pieces.
Step 3
Heat the oil in a cooking pan and add curry leaves. Add the ground paste and cook until the raw smell is gone and oil seeps out.
Step 4
Add chicken, Stir everything together thoroughly. Put the lid on and cook on medium heat until cooked.
Step 5
Serve while still hot garnished with coriander leaves.
Step 6
Goes well with rice, appam or chappathi.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
