Onion Chicken
an interesting unique dish with crunchy golden fried onion adding to the flavor and aroma. Onions are added double the proportion compared to usual chicken curries. Tender chicken pieces are cooked with spicy ingredients in its own juice oozing out of the flesh.
Ingredientsfor 6 servings
- 250 g Chicken
- 4 - Onions — cut into small cubes
- Ginger garlic paste - 1 tsp
- 11/2 tsp Chilly powder
- 1/2 tsp Turmeric powder
- 1 tsp Garam masala powder
- 1/2 tsp Cuminpowder (Jeerakam)
- 2 tsp Coriander powder
- 2 nos Green chillies slit into long pieces
- 50 g Cashew nuts — chopped
- Coriander leaves Few — chopped
- 4 - Oil
- Salt, to taste
Preparation
Step 1
For preparing Onion Chicken, Heat the oil in a pan.
Step 2
Fry half the chopped onions to a golden brown color.
Step 3
Add ginger-garlic paste, chilly powder, turmeric, coriander powder, salt and fry for a minute.
Step 4
Add chicken pieces and stir until the pieces are coated well with the onion mixture. Add water if necessary.
Step 5
Cook until the chicken pieces are soft and tender.
Step 6
Heat the oil in another pan and fry the remaining onion cubes, slit green chilies and cashews for few minutes.
Step 7
Add the above cooked chicken and give it a good stir.
Step 8
Sprinkle cumin powder, garam masala powder, chopped coriander leaves, stir and take it off the heat.
Step 9
Serve Onion Chicken hot with plain rice or naan.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
