Omelette Parotta
A staple flatbread of Kerala kitchens, cooked on a hot tawa until it puffs and develops golden spots. Tear it apart with your hands and use it to mop up every last drop of curry.

- 2 Egg
- 1 Small,chopped Onion
- 1 Small,chopped Tomato
- 1,finely chopped Green chilly
- Salt, to taste
- 2 tbsp Oil
Preparation
Step 1
Whisk the egg with chopped onion,tomato, green chilly and salt to taste.
Step 2
Heat ghee on a tawa and cook both sides of parotta for one minute.
Step 3
Pour the egg mixture on its top and cook for few minutes in low flame.
Step 4
Turn the parotta and cook again for one minute in low flame.
Step 5
And crispy omelette parotta is ready.
Tip
Cook on medium-high heat, not scorching hot. You want the bread to puff and develop spots, not burn.
