Omelette Masala
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 4 nos Eggs
- 2 nos Onion — chopped
- 1 nos Green chillies — finely chopped
- 1 nos Tomato sliced thin
- Ginger garlic paste - 1/2 tbsp
- 1/4 tsp Turmeric powder
- 1/2 To Chilli powder
- 1 tbsp Coriander powder
- 2 tbsp Tomato sauce
- 1/2 cup Coconut milk — optional
- Coriander leaves
- Oil
- Salt, to taste
- 1/4 tsp Pepper
Preparation
Step 1
Warm the oil in a pan.
Step 2
Cook the finely chopped green chillies and a small portion of the chopped onions.
Step 3
Beat the eggs well and add salt & pepper and the sauteed onions & chilli.
Step 4
Spread some oil on a heated pan and pour the egg mixture to make an omelette.
Step 5
Flip to cook both sides.
Step 6
When both sides are cooked, take it off the heat and cut into small square pieces.
Step 7
Set a pan over medium heat and pour in the oil.
Step 8
Add onions & sauté.
Step 9
Add ginger-garlic paste and cook until the onions become transparent.
Step 10
Add turmeric powder, chilly powder, coriander powder and salt.
Step 11
Stir everything together thoroughly and fry for 30 seconds.
Step 12
Add tomato slices and cook for 1 min.
Step 13
Add tomato sauce & 1 1/2 cups of water and boil to make gravy.
Step 14
Quantity of tomato sauce can be varied according to tanginess required.
Step 15
Optionally, add coconut milk for a milder taste.
Step 16
Add coriander leaves and take it off the heat.
Step 17
Add the omelette pieces into the gravy. Serve hot.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
