Omana Pola
Omana pola is a small envelope filled with nutty-eggy sweetness from Malabar cuisine. This sweet nosh from Malabar is a deliciously layered dish of coconut filling inside pancakes that are folded and shallow fried again. It is usually prepared in Ramadan season.
Ingredientsfor 6 servings
- For pancake
- 1 cup Plain flour
- 1 Egg
- Salt, to taste
- Water, to taste
- For filling
- 3 Egg
- 3 tbsp Sugar
- 10 Raisins
- 5 Almond
- 1/2 tsp Cardamom powder
- 2 tbsp Ghee
- For shallow frying
- 1 Egg
- 1 tsp Sugar
- Ghee
Preparation
Step 1
In a bowl,take plain flour,egg,salt aand enough water and make a thin batter.
Step 2
Heat ghee in a pan and toss in raisins and chopped almonds.
Step 3
Add the beaten eggs with sugar and cardamom powder and make a scramble for 3 minutes.
Step 4
Heat another pan and pour 1 spoon full of batter to make a thin pancake.
Step 5
Place a small portion of filling in the centre.flod its corners so that it resembles an envelope.
Step 6
Heat a frying pan on medium heat,dip the envelope in egg mixture and pan-fry in ghee on both sides.
Step 7
The sweet omana pola is ready.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
