Oma Podi - Traditional Snack
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 4 servings
- Omam (Black Onion Seed) : 2 tsp
- Flour : 100 gm
- Rice flour : 100 gm
- Chilly powder : 1 tsp
- Butter, to taste
- Asafoetida, to taste
- Salt, to taste
- Oil — for frying
Preparation
Step 1
Mix the rice flour and gram flour with the chilly powder, asafoetida, omam, salt and butter.
Step 2
Apply water and make it into dough.
Step 3
Fill it in the vessel and press it and fry them in oil.
Step 4
Turn sides and fry, stain the excess oil and serve hot.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
