Oletherachi - Beef Roast
Oletherachi is a favorite of Malayalee generation. Also viewed as a signature dish of Christian community, Oletherachi or Beef Roast is a tasty preparation of red meat cooked with varied herbs and spices. Beef roast with coconut flakes is simply irresistible.
Ingredientsfor 4 servings
- 2 Lb Beef — cut into small cubes
- 2 nos Red onions — cut into thin, long pieces, large
- 4 nos Green chillies split into two, large
- 25 g Ginger — finely chopped
- 5 nos Garlic pods — cut into thin, long pieces, large
- 2 Sticks Cinnamon broken into 2 - 3 pieces (Karugapatta)
- 1 tbsp Fennel seeds (Perinjeerakam)
- 1 tbsp Black pepper powder
- 11/2 cup Coconut flakes Thenga khothu
- 1 cup Coconut oil
- 3 Stem Curry leaves
- 1 tbsp Salt
- 1 tsp Turmeric powder
- 2 tbsp Coriander powder
- 3 tbsp Meat masala powder
Preparation
Step 1
Mix together turmeric powder, coriander powder, about 2 tbsp of meat masala powder and about 1 tbsp salt into a thin paste.
Step 2
Rub the mixture into the cubed meat thoroughly and set it aside for about an hour.
Step 3
Heat about 3/4 of the coconut oil in a cooking pot on a medium flame.
Step 4
When the oil is hot, add the chopped ginger and garlic and sauté.
Step 5
Add fennel seeds and broken cinnamon sticks to the mixture and sauté.
Step 6
Add split green chillies and sauté.
Step 7
Add the shredded onions to the mixture and sauté, till they turn yellow.
Step 8
Add the marinated beef to the mixture and stir, till the mixture is even.
Step 9
(Coconute Flakes : Using a small sturdy knife - pry out the coconut meat from the shell. It will come out in pieces but try to keep them as large as possible. Coconut flakes(Thenga khothu) can be made by cutting out thin strips (about a 1/4" thick) of coconut and slicing it into small chips.) Add the coconut flakes to the mixture and stir again, till the mixture is even.
Step 10
Add about a cup of water to the mixture and cover the pot.
Step 11
Allow the meat to cook for about 10 minutes on a low-medium flame.
Step 12
Check once in a while to make sure that there is just enough water so that the pot is not dry.
Step 13
Once the meat is cooked, take the pot off the stove.
Step 14
The meat doesn`t need to be well done at this stage.
Step 15
Heat the remaining oil in a frying pan.
Step 16
Add the curry leaves and sauté, till it breaks out.
Step 17
Add black pepper powder and the rest of the meat masala and sauté.
Step 18
Add the contents of the pot into the frying pan and stir.
Step 19
Check the level of salt and add more, if required.
Step 20
Stir roast the mixture over a low-medium flame, till the mixture turns dark.
Step 21
Do not allow the meat to burn.
Step 22
Serve Beef Roast hot with bread or chappathis.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
