Olan Pumpkin Curry
A simple pumpkin curry served during Kerala Sadhya - Ramya V.
Ingredientsfor 4 servings
- 1/2 kg Pumpkin Mathanga
- 1/2 cup Vanpayar Vellapayar
- 2 Or Green Chilly slit lengthwise
- 1 inch Ginger — cut into thin long pieces
- 1 cup Water
- 2 tbsp Coconut milk
- 1 sprig Curry leaves
- 1 tsp Coconut oil
Preparation
Step 1
Cook vanpayar(vellapayar) with salt and set aside.
Step 2
Peel and cut pumpkin into flat 1 inch square pieces.
Step 3
Boil the pumpkin pieces along with green chillies, ginger and salt.
Step 4
Add the cooked vanpyar and boil for a while.
Step 5
Once cooked, add coconut milk.
Step 6
Garnish with curry leaves and coconut oil.
Step 7
Serve while still hot.
Step 8
It can even be served as a thick soup by smashing the pumpkin and adding extra water.
Tip
Taste the gravy before adding the main ingredient. It should be well-seasoned and balanced on its own — the protein or vegetable will dilute it slightly.
