Noodle Tomato Soup
Soothing and peppery, this Kerala-style soup is what grandmothers prescribe for cold days and sore throats. Simple ingredients, quick to make, and genuinely restorative.
Ingredientsfor 3 servings
- 1 Packet Noodles
- 2 nos Tomatoes small
- 1 nos Onion small
- 1 tsp Chilly powder
- 1 tsp Masala powder — optional
- 4 cup Water
- Salt, to taste
- 2-3 tsp Oil
Preparation
Step 1
Cut onion and tomato into small pieces.
Step 2
Warm the oil in a pan.
Step 3
Fry the chopped onions and tomato pieces in it.
Step 4
Add chilly powder, masala powder and salt along with 4 cups of water.
Step 5
Allow it to let it bubble for 2 minutes.
Step 6
Add the noodles and Let it cook for 3 minutes. Serve hot.
Tip
Good shallots are the backbone of Kerala cooking. They should be small, pink-purple, and strong-smelling. Large onions can substitute, but the flavour will be different.
