Ney Pathiri
Soft, layered, and golden from the griddle — this ney pathiri is the perfect vehicle for scooping up thick curries and gravies. The dough rests until pliable, then gets cooked until each layer separates.
Ingredientsfor 3 servings
- 2 cup Rice flour
- 12 nos Shallots
- 1 nos Green chilly
- Curry leaves A, a few
- 1/2 tsp Turmeric powder
- Salt, to taste
- Water, to taste
- Oil, to taste
Preparation
Step 1
Mix together rice flour, chopped shallots, chopped green chillies, curry leaves, turmeric powder, salt with water as needed.
Step 2
Make small balls out of the mixture.
Step 3
Press it on banana leaf to make small circles.
Step 4
Pour oil into a kadai and heat it and fry in it till it turns brown in color.
Tip
Cook on medium-high heat, not scorching hot. You want the bread to puff and develop spots, not burn.
