Nenthrakkaya (Raw Banana) Chips
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 6 servings
- 4 - Nenthrakkaya Raw bananas
- 1 – Turmeric powder mixed water
- 50 Mltrs Salt mixed water approx
- Coconut/Refined Oil As required to fry the chips
Preparation
Step 1
Peel the Nenthrakkaya (raw Bananas) and put them into the turmeric water and keep it in the turmeric water for about 10 minutes.
Step 2
After about 10 minutes, take the raw bananas out from the turmeric water and allowit to dry for about 5 minutes, to remove the water from the bananas.
Step 3
Cut the raw Bananas into four pieces as shown in below picture.
Step 4
Then cut them further into small and thin pieces.
Step 5
Heat the oil in a frying pan and put the cut pieces of Bananas into this hot oil and stir it well.
Step 6
Allow to fry the raw Banana pieces till it turns crispy and the colour into golden.
Step 7
Add one or two teaspoons of salt mixed water into this fried raw Banana pieces and stir it for 1-2 minutes more.
Step 8
Get out the fried chips from the frying pan and keep it in an air tight jar/tin.
Step 9
This chips can serve as a snack with evening coffee/tea or cool drinks etc.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
