Nadan Koonthal Roast | Squid Roast
This mushroom, also known as Squid Roast, is a popular Kerala-style seafood dish celebrated for its rich flavors and bold spices.
Ingredientsfor 4 servings
- 200 g Squid
- 1 nos Onion small
- 1 &1/2 tbsp Kashmiri chilly powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Garam Masala
- 2 nos Dry red chilly
- 1 Clove Garlic
- 1 inch piece Ginger
- Salt, to taste
- 1 Handful curry leaves
- 2 tbsp Lemon juice
Preparation
Step 1
First clean the squid and slice it into rings and then drain it nicely.
Step 2
Grind all the ingredients( except oil and squid ) into smooth paste using a mixer grinder.
Step 3
Marinate the squid in that paste.
Step 4
Keep it aside for at least 15 minutes.
Step 5
Heat oil in a pan and add marinated squid and curry leaves. Now add little water in it and Put the lid on and cook for 5 minutes for the flavors to infuse. Open and cook for another 10-15 minutes while stirring occasionally.
Step 6
Add lemon juice and Stir everything together thoroughly. Have this scrumptious squid roast with appam, roti or even rice.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
