Nadan Kadachakka(Bread Fruit) Stir Fry
Slow-roasted in coconut oil with a generous hand of spices, this quail fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 3 servings
- 1 nos Kadachakka/bread fruit sliced into long thin pieces
- 1 cup Coconut — grated
- 2 nos Green chillies
- 2 tsp Coriander powder
- 1 tsp Chilly powder
- 1 tsp Turmeric powder
- Oil, to taste
- 1 tsp Mustard
- Curry leaves, a few
- Salt, to taste
Preparation
Step 1
For preparing nadan kadachakka thoran, cook the kadachakka with chilly powder, turmeric powder, coriander powder and salt. Set aside.
Step 2
Heat oil and let the mustard seeds crackle and curry leaves.
Step 3
Roughly crush coconut and green chillies. Add this to the allow to crackleed mustard and fry.
Step 4
Add the kadachakka and cook until crispy.
Step 5
Nadan kadachakka thoran is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
