Nadan Inji Puli
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 4 servings
- 1 cup Tamarind juice
- 3 nos Jaggery crushed, Sharkara
- 2 nos Dry red chillies — chopped
- 3 nos Green chillies — chopped
- 3 tsp Ginger — chopped
- 2 tsp Chilly powder
- Curry leaves, a few
- 1 tsp Mustard
- 1 tsp Fenugreek seeds (Uluva)
- Salt, to taste
- Water, to taste
Preparation
Step 1
For preparing nadan inji puli, heat tawa and allow to crackle mustard, fenugreek and curry leaves.
Step 2
Add ginger and green chillies.
Step 3
Add chilly powder, salt and jaggery.
Step 4
Add tamarind water and boil. Add water if required.
Step 5
Lightly thicken and serve. Nadan inji puli is ready.
Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
