Nadan Chicken Fry Easy
A very simple and tasty recipe in Kerala. This Nadan Chicken Fry Easy can do by beginners and bachelors too. This Nadan chicken fry is the best combo for steamed rice.
Ingredientsfor 2 servings
- 1/2 kg Chicken cut medium
- 2 nos Onion — sliced
- 2 nos Green chillies
- 1 piece Ginger — crushed
- 4 Cloves garlic — crushed
- 1/4 tsp Turmeric powder
- 11/2 tsp Chilly powder
- 1/2 tsp Coriander powder
- 1 tsp Chicken Masala — optional
- Fennel seeds A pinch, Perum (jeerakam)
- 1 nos Cinnamon stick Karugappatta
- 3 nos Cloves (Grambu)
- 1 nos Star aniseed Thakollam
- 2 nos Cardamom (Elakka)
- Black pepper, a few
- Curry leaves, a few
- Salt As req
- 2 nos Dry red chillies
- 1 tsp Mustard seeds
- 10 nos Shallots
- 3 tsp Oil
Preparation
Step 1
Roast fennel, cinnamon, cloves, star aniseed, cardamom and black pepper till the aroma comes, make it a powder.
Step 2
Marinate chicken with all the ingredients and the powder except oil, shallots, mustard seeds and red chillies for 30 minutes.
Step 3
Cook it with enough water until all the water gets evaporated. Heat the oil in another pan, add mustard seeds, dry red chillies, shallots. cook well until shallots become golden brown.
Step 4
Add cooked Chicken to the pan give it a good stir till chicken is fried. Serve hot.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
