Nadan Ayala Varuthathu
Sweet, rich, and deeply satisfying — this is the snack that shows up at every Kerala celebration, temple festival, and Onam Sadya. Made with jaggery, coconut, and patience.
Ingredientsfor 2 servings
- 3 Ayala fish
- 3 tsp Chilli powder
- 1/2 tsp Turmeric powder
- 1 tsp Pepper powder
- 1 tsp Salt
- 1 Shallots
- 5 Curry leaf
Preparation
Step 1
For preparing the delicious fish fry, first wash, clean and cut ayala fish into pieces. In a mixer blend chilli powder, shallots, turmeric powder, salt, curry leaf and pepper into a smooth paste. Marinate the mackerel pieces with the mixture for 15 minutes. Keep in the refrigerator.
Step 2
After 15 minutes take out ayala from refrigerator.
Step 3
Warm coconut oil in a kadai and fry marinated ayala one by one into a golden brown color.
Step 4
Now ayala fry is ready. Serve with hot rice.
Tip
The binding point is everything — cook the mixture just until it holds shape when pressed. Overcooked, it turns hard; undercooked, it crumbles.
