Naadan Pavekka Thoran
Simple, honest, and on every Kerala lunch plate — bitter_gourd thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 3 servings
- 3 nos Bitter Gourd
- 1/2 Of Coconut
- 1 nos Onion
- 5 nos Green Chillies
- 1/2 inch Ginger
- Salt, to taste
- Oil, to taste
- Mustard seeds
- Water, to taste
Preparation
Step 1
Soak grated bitter gourd in salted water for 5 minutes and then drain the water well.
Step 2
Mix the bitter gourd, coconut, salt, green chilli, onion and salt well with hand.
Step 3
Pour oil into a pan and heat it.
Step 4
Allow to crackle mustard sseds.
Step 5
Add ginger.
Step 6
Add the bitter gourd mix. Stir everything together thoroughly.
Step 7
Sprinkle little water. Put the lid on and cook till all the water has dried up.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
