Naadan Pavakka Thoran
an vegetarian dish in Kerala Cuisine that goes very well with hot rice. prepared from bittergourd, a vegetable very largely cultivated and popular in Kerala.
Ingredientsfor 3 servings
- Bitter Gourd : 3 nos
- Coconut : 1/2 no
- Onion : 1 no
- Green chilli : 5 nos
- Ginger : 1/2 inch(thinly sliced
- Salt, to taste
- Coconut oil, a few
- Mustard : 1 tsp
- Water, to taste
Preparation
Step 1
For preparing the healthy, nutritious dish, first soak grated bitter gourd in salted water for 5 minutes and then drain the water well.
Step 2
Mix the bitter gourd, coconut, salt, green chilli, onion and salt well with hand.
Step 3
Heat oil and add mustard. After the mustard allow to crackles, add ginger.
Step 4
Stir in the bitter gourd mix and give it a good stir in low flame.
Step 5
Sprinkle little water, cover with a lid and let it cook.
Step 6
Cook till all the water has dried up and then remove it into a serving dish.
Step 7
Stir fry or thoran dish is ready. Serve hot with rice for noon day meals.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
