Naadan Mushroom Curry
Coconut flavored and lightly spiced Naadan Mushroom Curry is a delectable vegetarian side dish that goes well with chappathi, roti etc. A spicy delicacy rich in flavors and aroma.
Ingredientsfor 4 servings
- 1 Lb Mushroom — sliced
- 1 nos Onion big
- 2 nos Tomato
- 1 nos Potato
- Ginger garlic paste - 1/2 tsp
- 1 tsp Chicken masala
- 2 tbsp Fried coconut
- 4 - Cloves (Grambu)
- 1/2 tsp Fennel seeds (Perinjeerakam)
- 2 piece Cinnamon (Karugapatta)
- 1/4 tsp Turmeric powder
- Curry leaves A, a few
- Salt, to taste
- Oil, to taste
Preparation
Step 1
For preparing Naadan Mushroom Curry, first fry cloves, fennel seeds and cinnamon and grind it with the fried coconut into a fine paste.
Step 2
Chop onion, tomato and potato.
Step 3
Pour oil into a pan and heat it or a kadai.
Step 4
Cook onions till they goes golden brown.
Step 5
Add the ginger-garlic paste.
Step 6
Add tomato and cook until the oil begins to separate.
Step 7
Add the chicken masala and turmeric powder and fry.
Step 8
Add the potatoes and the ground coconut paste and mix them thoroughly.
Step 9
Finally, add the sliced mushrooms and salt and cook until done.
Step 10
Once cooked, add curry leaves.
Step 11
Serve Naadan Mushroom Curry with rice or roti.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
