A deeply satisfying naadan kadukka (mussels) curry (step by step photo simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 5 servings
- 1/2 Cup, Mussels
- 1 Onion
- 2 Green chilly
- 1 Tomato
- 1/4 tsp Turmeric powder
- 1 tsp Chilly powder
- 1 cup Water
- Coconut half a coconut, grinded
- 1/2 tsp Mustard
- Salt, to taste
- Curry leaves, to taste
- Oil to fry
Preparation
Step 1
Mix all the ingredients except mustard and oil in a vessel.
Step 2
Bring the curry to let it bubble for 10-15 minutes.
Step 3
Once the mussels get well cooked pour the grinded coconut and bring to boil again.
Step 4
Heat the oil in another vessel and sautT mustard in it.
Step 5
Mix it with the curry and serve it.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
