Naadan Chemmeen Mulaku Masala
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 4 servings
- Prawns : 150 g
- Shallots : 20 nos
- Ginger : 1 piece
- Garlic : 4 cloves
- Green chillies : 4 nos
- Curry leaves, a few
- Mustard seeds : 1 tsp
- Chilli powder : 2 tsp
- Turmeric powder : 1 tsp
- Coriander powder : 1 tsp
- 2 tsp Fish masala
- 2 nos Gamboges Kudampuli
- Salt, to taste
Preparation
Step 1
Clean and de-vein the prawns. Crush shallots, green chillies and ginger.
Step 2
In a clay pot or kadai, heat oil. let the mustard seeds crackle.3) Add the crushed shallots and fry till soft.4) Add garlic and tomatoes into it and fry again.
Step 3
Add the turmeric, chilli powder, coriander and fish masala.6) Fry till oil comes on top.7) Add gamboges and salt. Add little water and cook the masala.8) Add prawns and curry leaves. Close with lid and cook prawns.
Step 4
Serve while still hot with rice.
Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
